Lechon is a skewered whole pig that is roasted over charcoal which is very popular dish in the Philippines. It started way back on Spaniards Era and the word lechon is arrived from the Spanish word leche (Milk) which refers to a roasted suckling pig. Since then, This dish has been the highlight meal in any gathering.
Lechon are cooked on a bamboo spit over charcoal for a few hours with traditional manual which is turning. The pig is roasted on all sides for 4-5 hours depending of the size of the pig if it's big or small. The processing of cooking is to make the skin crisp and make it juicy. The ingredients are suckling pig, stuffing of lemongrass, onion and garlic.
